Chocolate Chip Banana Bread

I remember a few years ago when I made this in quarantine. Long story short - never trust those short "quick and easy videos." Anyways I used a different recipe to make the banana bread. It turned out like rotis....

After a long time I decided to make some banana bread again after seeing bananas that no one was eating in my fruit bowl and I could not stand seeing it since it made me feel like it was not matching. I decided to take initiative today and also my sister could not eat eggs and nuts and banana bread is very flexible when it comes to allergies like these!

Also very much inspired by those aesthetic food shorts. It made me feel a bit too hungry 😂

Ingredients:

- 2 cups all purpose flour

- 1 teaspoon of baking powder

- 1/2 teaspoon of baking soda

- 1 teaspoon of cinnamon powder

- 1/2 teaspoon of ginger powder

- 1 teaspoon of coffee powder

- 1/2 cup of butter, softened

- 1/4 cup of castor sugar or powdered sugar

- 1 + 1/2 cup of mashed bananas (approx. 3 bananas)

- 1/2 cup milk

- 1/2 cup of chocolate chips


Steps:

1. Preheat the oven at 180 degrees, line the loaf pan with parchment paper.

2. In a big bowl, use a whisk to mix flour, baking powder, baking soda, cinnamon powder and ginger powder

3. In another bowl, beat the butter and sugar until its fluffy.

4. Mix the bananas in with the mixture of butter and sugar. Use the fork to make sure its well incorporated.

5. Combine the dry ingredients with the wed ingredients. Beat it with the milk.

6. Fold in the batter with some chocolate chips. Make sure the batter is thick.

7. Transfer the batter into the loaf pan and bake it at a 180 degrees for 45 - 60 minutes.
