Feta Ratatouille Tagliatelle:
When I made this scrumptious dish, I didn't expect for it to turn out the way it was. Fun fact, well not really fun but anyway it was supposed to be a Halloumi Penne pasta! I also forgot to add a few ingredients but in the end it turned out AMAZING!
I highly recommend you to make this dish if any family is coming over, meals with friends or just any casual or semi casual event.
Ingredients:
- 2 thick green chilies
- 7 spring onions
- a block of Feta cheese
- Basil for garnish (optional)
- 2 Zucchinis / Courgettes
- 4 large cups of Marinara sauce
- Garlic
- Paprika
- Vegetable stock
Steps:
1. First take a block of feta and slice it into thick slices. Not too thick but also not too thin.
2. Take out a pan and fry the feta slices on each side for 15 - 30 seconds. Do this until all slices are fried. Put the slices aside in a bowl or a plate.
3. Slice the spring onions in a thin manner on the chopping board. Put it in a bowl.
4. Remove the seeds from the chilies. Finely chop the chilies and garlic before putting it in a bowl with your spring onion slices.
5. Use the same pan to fry the chilies, garlic, and spring onions for a few minutes until it has become fragrant.
6. Cut both courgettes (its zucchini but for the sake of simplicity I'll use courgettes) in quarters and add them to the pan along with a pinch of paprika and your marinara sauce. Fry it for 3 minutes and then add your vegetable stock.
7. Bring up to a boil for 12 minutes to make sure sauce won't dehydrate.
8. After its finished boiling, add your tagliatelle pasta, move it until completely drenched in sauce to prevent it from sticking to the pan.
9. Finally, you garnish it with pieces of basil and your pieces of feta! Bon appetite! Ready to serve to your friends, family, or guests!
TIP: When you're eating this dish and have taken a piece of feta along with the pasta, mush it into your pasta to get a tangy yet fresh taste.
TIP: If you want to add a little bit of freshness and tanginess into your pasta, you can add lemon juice along with your vegetable stock!

Instead of feta, you can use goat cheese, labneh or ricotta too! If you want a mild flavor I suggest you use cottage cheese!
